Swedish Yellow Pea Soup with Vegetables
"Gul artsoppa med gronsaker"
2 carrots, chopped
2 onions, diced
1 leek, sliced thin
2 stalks celery, chopped
4 thick bacon slices
3 1/2 c. vegetable stock
1/4 tsp coriander
1/2 bunch cilantro, chopped
Soak peas in water overnight. Drain. Bring peas to boil in 1 1/2 qts water for 20 minutes, then set aside. Cut the bacon in to bite size pieces and sauté in the pan. When browned, add the chopped onion, carrots, celery and leek and cook until tender. Add the peas and the stock. Simmer for 1 1/2 hours. Puree the soup in a blender. Add salt and pepper to taste, add coriander. Garnish with cilantro.
